There are a few things in our house that are staples as side-dishes. Stuffed sweet potatoes and cauliflower rice are among two that rotate in usually at least once a week.
Cauliflower Rice – (referred to in our house a ‘lolo rice’) seriously delicious and easy to customize. We don’t always use cilantro – it’s fantastic with or without.
That delicious looking pile of goodness at the top of the plate is a stuffed sweet potato (click for recipe). The best thing about this recipe is 1) it has BACON – yum! 2) you can easily substitute whatever you have on had to sauté and cover your potato. We haven’t found a dish it doesn’t compliment. Immerse
